It’s one of the favorite items from the menu at Café Amalfi and a great meal idea for those days when you’re dreaming of life by the beach.

Seafood Chowder

Ingredients

2 Ribs of celery
2 Carrots
2 Yukon gold potatoes
½ Yellow onion
3½ Cups clam juice
¼ Cup flour
¼ Cup butter
2 Bay leaves
1 Cup heavy cream or half & half
½ to 1 Cup chopped clams
Salt
Pepper

Optional toppings:
Bacon
Cheese
Scallions

Directions

  1. Peel and finely dice carrots, potatoes, onions, and celery
  2. Melt butter down in a heavy bottom pot
  3. Add onion, celery, and carrots, sautéing until tender
  4. Add potatoes and sauté another minute
  5. Add flour to mixture stirring continuously for 1-2 minutes
  6. Add clam juice and bay leaves, bring to a simmer
  7. Simmer until potatoes are tender
  8. Add clams and cook until heated
  9. Add cream and bring to a simmer
  10. Add salt and pepper to taste
  11. Optional: add toppings such as bacon, cheese, and scallions
  12. Serve and enjoy
